Tasty Tuesday!

This day is pretty typical for me these days, except sometimes my evening snack is bigger and I don't eat a "proper" dinner.  This is just me, listening to both my hunger signals and my mind, and tracking it all on My Fitness Pal.  I wanted to get this post out of the way because it is in fact Tuesday, so tomorrow will be the post about junk food.  (Though based on this post, you can probably guess how I feel about it).

Tasty Tuesday!

1/2 cup oats, 1/2 cup soy milk, 1 small banana (in redneck bowl)

mix of raw and cooked veggies for lunch! Spinach, spring mix, tomatoes, brussel sprouts, red onion, and kidney beans

with a cup of these back seedless grapes!

BIG salad with leftover brussel sprouts, kale, spinach, spring mix, cherry tomatoes, mini bell peppers, shredded carrots, and kidney beans!

and a side of steamed asparagus!

Plus a few more grapes.  :-)

I tracked on My Fitness Pal, and this added up to just over 1200 calories.

Now I'm off to complete my late-night workout of Nordic Track skiing and stationary biking!

Tasty Tuesday!

Time for another edition of Tasty Tuesday!  Today was a delicious day.  And it felt so good to eat like this.  After two full weeks of avoiding processed food (for the most part) and focusing on whole and healthy options, I feel amazing.  I'm looking forward to see how the rest of the 6 weeks go.  Two weeks down, four to go!

The day started out with a green monster smoothie!  In the mix: 1 banana, 3 strawberries, 1 cup soy milk, 1 tablespoon flaxseed, and a couple of ice cubes.  :-)

Lunch was a gigantic salad of mixed greens, carrots, cucumber, bell pepers, cherry tomatoes, red onion, and 3/4 cup of kidney beans.  Topped with a mix of red wine vinegar, fat free zesty italian dressing, and lime juice.

...and an orange! (too long since you've seen my face, right?) 

Dinner was a big bowl of cooked veggies (squash, peppers, onions) with black beans. 

Then it was time to hit my parents' treadmill!  I don't have one, but they live just down the street and have this awesome setup with a TV in the corner, so I got caught up on Pretty Little Liars. (Yes, I know who "A" is now!)

My run wore her out.

And finally, a big bowl of fruit before bed!  In the mix: 1 orange, 1 banana, lots of grapes.

Tasty Tuesday - Eat to Live style!

I was running late this morning, so I grabbed these things for breakfast:

an ounce of almonds and two bananas.  I ended up eating one banana for breakfast during my first class, then wasn't hungry again until lunch.


It was homemade chickpeas (crock pot!) and some cooked veggies along with my second breakfast banana.

Later I enjoyed a snack of vinegar soaked cucumber and onion with a couple of cherry tomatoes.  It's really good!  Just soak sliced veggies in a bowl that is half apple cider vinegar and half water, with a bit of sweetener.


I had a big plateful of cucumbers and tomatoes and half of a baked potato for dinner...

Then another bowlful of veggies and chickpeas with a small banana on the side.  So I actually ate 5 times today, but my banana-only breakfast was pretty pathetic.  ;-)

Eat to Live is supposed to be "no eating between meals" and I am just not into that idea yet.  I am a snacker.  I'm especially a snacker when I don't get a substantial breakfast!  On days when I eat a bowl of oats for breakfast, I am not as hungry the rest of the day.

Things to note: 
1) I ate three bananas today.
2) In total, this is about 1100 calories, which yes I know seems like not enough.  But I'm seriously stuffed.  This is a LOT of food! 

I am about to go do some cardio on the Nordic Track, and I may get hungry again after that.  If I do, I will eat my ounce of almonds and will then be safely above the 1200 mark.  :-)

Tasty Tuesday!!!

This is long-overdue, and I've missed Tasty Tuesdays!  Hopefully I will keep it up this time and do a new Tasty Tuesday every week for a while, at least until the end of my "Lose 12.6 by Xmas" challenge.

At the moment, I'm tracking on My Fitness Pal, so this entry will only show calorie-counts.

I started the day with a thirty minute workout on my  birthday present from Stacey, this cool little stepper machine thing.  :-)  I have to guess on the calories burned, but based on how I feel as I do this, I would guesstimate that I burn at least 100 calories for every 10 minutes, so I gave myself 325 for this workout.  Sidenote:  I overslept a bit, and had planned for a 45 minute workout, so I was really proud of myself for getting up and gettin gin 30, since I typically am pretty "all or nothing" with this sort of thing.

 8:00am and it was time for breakfast!  Breakfast was overnight pumpkin oats (3/4 cup oats, 1/2 cup pumpkin, 1/2 cup almond milk, in fridge overnight, recipe courtesy of my MFP/WW/blogging friend Rae, who writes really cool poetry here.) breakfast = 290 calories
I had a banana and an applesauce some time between 10 and noon.  This is a recycled picture because I ate my banana without a photo.  My banana was a lot smaller than this one! snack = 117 calories
Lunch was a bunch of reduced-fat Ritz crackers with some bean dip (1/2 cup refried beans, 1/2 cup canned tomatoes).  lunch = 415 calories

After lunch I enjoyed 3 almond dream bites.  These are amazing.  snack = 46 calories

 Dinner was three parts- the rest of my mom's leftover stew...
 a stolen Dr. Pepper TEN... (take that, men!)
and a few baby carrots!  Dinner = 335 calories
 I had two evening snacks: First, 1 cup of cheerios with 1/2 cup almond milk...
and finally, a bowl ful of broccoli and cauliflower!  evening snacks = 233 calories

total calories for the day = 1436

Tasty Tuesday!

First of all, another reminder (maybe the final one!) to enter my 150 Followers Giveaway!!! Entries will be accepted until 5:00 pm central time tomorrow, August 10.



It's been a couple of weeks since I have done a Tasty Tuesday, so I thought that it was time to remember to take some pictures of my food!  Now...  oops, I totally forgot to bring it with me to work in the morning, so I once again have to just tell you my morning eats.  You'll just have to take my word for it.  ;-)

Breakfast: big bowl of PB&Syrup Oats!  Recipe: Nuke 1 cup old fashioned oats with 1 cup almond milk for 2 and a half minutes.  Stir in a tablespoon each of peanut butter and sugar free syrup.  450 calories.

Morning snack: Luna bar and extra small banana 252 calories

Lunch: Bean and veggie bowl- Recipe: 1/2 cup canned tomatoes, 1/2 cup kidney beans, 1/4 cup shredded carrots, 2 cups spinach steamed in microwave for 1 minutes, add 1 tsp EVOO and salt to taste.  224 calories


Afternoon snack #1: about a cup and a half of fresh cantaloupe! 83 calories


Afternoon snack #2: my newest obsession- So Delicious Coconut Yogurt in vanilla 140 calories
Dinner: 4 cups of steamed broccoli and cauliflower, 1/2 cup black beans, 1 cup brown rice 514 calories

Unfortunately, I started to feel under the weather this afternoon, and that has only gotten worse!  Now I have a sore throat, runny nose, and a fever.  :-(  So needless to say, I am skipping tonight's planned workouts (6 Week 6 Pack + some time on the bike) to go to bed early and to spend a lot of time with these guys:

Today's totals- 1663 total calories eaten - 169 calories exercised (I counted some housework towards exercise today, don't judge me!) = 1494 net calories

Well, I'm off to bed.  Hopefully tomorrow I'll feel better and be back on track with my exercise!

Tasty Tuesday

Yes, I know that today is actually Wednesday, but it feels like Tuesday because of the long weekend!  So I forgot about Tasty Tuesday yesterday and did it today instead. 

Here's another day of calorie-counting with My Fitness Pal:

Here's the last of breakfast, because I was too hungry to remember to take a picture of it first!  It was a bowl of oatmeal made with almond milk, with a bit of applesauce and syrup.

Lunch was brown rice with black and kidney beans, some canned tomato, and a teaspoon of EVOO.

These are the snacks that I ate between lunch and dinner:  1 medium banana, 1 ounce of cocoa roast almonds, and 1 Luna Bar.  I love snacks!!!

After an hour of interval training on the treadmill, I enjoyed 3/4 cup of these:  Bush's Vegetarian Baked Beans!  I had forgotten how delicious these are. 

My evening snack was some Wasa crackers with salsa.  This is one of my favorite snacks! 

1716 calories eaten
- 556 calories earned with exercise
= 1150 net calories

I try to aim for at least 1300 net calories a day, but I went over by a couple of hundred yesterday, so I'm sure that it is okay to be a bit under today.  Today is a good example of the healthy-ish vegan eating that I strive for!  The only thing is that I wish that I could have incorporated more vegetables and healthy fats.  There's always tomorrow, though!
