Tasty Tuesday

Yes, I know that today is actually Wednesday, but it feels like Tuesday because of the long weekend!  So I forgot about Tasty Tuesday yesterday and did it today instead. 

Here's another day of calorie-counting with My Fitness Pal:

Here's the last of breakfast, because I was too hungry to remember to take a picture of it first!  It was a bowl of oatmeal made with almond milk, with a bit of applesauce and syrup.

Lunch was brown rice with black and kidney beans, some canned tomato, and a teaspoon of EVOO.

These are the snacks that I ate between lunch and dinner:  1 medium banana, 1 ounce of cocoa roast almonds, and 1 Luna Bar.  I love snacks!!!

After an hour of interval training on the treadmill, I enjoyed 3/4 cup of these:  Bush's Vegetarian Baked Beans!  I had forgotten how delicious these are. 

My evening snack was some Wasa crackers with salsa.  This is one of my favorite snacks! 

1716 calories eaten
- 556 calories earned with exercise
= 1150 net calories

I try to aim for at least 1300 net calories a day, but I went over by a couple of hundred yesterday, so I'm sure that it is okay to be a bit under today.  Today is a good example of the healthy-ish vegan eating that I strive for!  The only thing is that I wish that I could have incorporated more vegetables and healthy fats.  There's always tomorrow, though!

Leah, what an incredibly healthy day! Hmm...it doesn't look like you ate all that much though...Are those luna bars high in calories?

Oh and I know this is totally random, but why don't you buy a two piece? You have such great abs!

Congrats on a healthy vegan day!! I also love Wasa crackers. I should try them with salsa.

I'm actually glad you didn't make it Imagine last night because they were closed! Kristie, the owner, was very pregnant, and she went into labor yesterday before our scheduled dinner. We had to scramble for a back-up plan at 6:15, and we settled on the Trolley Stop Market. They have several yummy vegan items!

I'll keep you posted on next Wednesday. Because Kristie and her husband do all the work at Imagine, we're not sure when it will re-open, but they've been training her sister to help while Kristie's out with her new baby. So hopefully, they'll only be closed a few days.

when you eat the beans/tomatoes/etc... do you eat it warm or cold?

haha thanks for the info. I was just curious! I like mine warm. I am going to make my own little bean/rice/veggie concoction for supper tonight.

Thanks for the comment on the pictures, too! I like to think married life is a good fit. It has it's challenges and it's rewards--just like in any relationship.

I actually never thought of wasa crackers and salsa! I usually spread some cheese on them - great idea.
