Millet: re-reviewed

Okay, I gave this grain another chance yesterday, since I had a bunch of leftovers in my fridge. (I tend to make a big pot of grains on the weekend and use it throughout the week.)
Anyway, I tried some leftover millet mixed with beans and some EVOO, cold, and it was actually pretty delicious and filling.

Side note, I think that I may be becoming an EVOO addict. But it's better than other food addictions I've had in the past! I add it to everything. I just love the flavor! And so far it hasn't stalled my weight loss a bit. There must be something to the healthy oils and fats after all.

The point is, always try again with grains! :-)

I tried millet for the first time about 1-2 months ago. I made the seitan polenta casserole from the Kind Diet. She says you can use millet instead of polenta. I loved it! I am surprised you don't like quinoa. The first time I ever tried quinoa I made quinoa croquettes from Vegan with a Vengeance by Isa Chandra Moskowitz. I love that recipe with the mushroom gravy she suggests and mashed potatoes. You might give that try. Now I eat quinoa in a lot of other ways but that was my introduction to it. I also just started using whole wheat couscous too and I love it!

I am going to give quinoa another chance, since I still have 3/4 a bag of it! And I made it plain, didn't add any flavoring to it, which I'm sure had something to do with it.

Another thing with quinoa is that sometimes it can be bitter if you don't wash it off first. I usually don't wash it, but I know a lot of people do. I would trying cooking it in with something next time and see if you like it that way. Good luck on your grains adventure! :)

when i first made quinoa i didnt ook it for long enough... and it didnt go to the right texture. since id never made it before and didnt know anything about it really, i wasn't sure what it was supposed to look like.
it is good, im glad i tried it again, cause the second time it worked out.
